About Us

As a young teenager I had the most crooked teeth ever.  My orthodontist said that it looked like someone took a mounthful of teeth and threw them at my face.  So, I got braces.  The braces came off right around my 16th birthday.  It was very exciting to get the braces off and have straight teeth, but that was about the time when the hand tremors started.  No one really thought much of it because my mom had developed hand tremors when she was younger and they had just went away  As the years passed my hands kept shaking.

In my early college years I went to a homeopathic doctor who took my readings and it was determined that the metal levels in my body were too high.  I was basically struggling with heavy metal toxicity because of my braces.  This began years of trying different treatments to get all the metal out and although I had some great short term successes, nothing worked permanently.

In October of 2009 I started dating the wonderful man who would later become my husband.  Through different discussions with him and my parents it was determined that the heavy metal problems would most likely never go away as long as I had a metal permanent retainer in my mouth.  So we made an appointment with an orthodonist in the area I live in now and had the retainer taken out.  This caused a huge problem with my intestinal system because of the shock and I ended up in a doctor's office.  The diagnosis was IBS.  So started more research and experimentation to mange the problem.

In the meantime, I got married to my best friend.  In a doctor's check up he was told that he needed to lower his tryclcerides.  This is accomplished the best by limiting the amount and types of carbs you eat.  Around the same time I came across some IBS information suggesting that I should be limiting my starch intake.  So we have turned to a low carb diet, limiting any carbs outside of beans, vegetables, and fruit.  Any rice has become brown rice and any pasta has become whole wheat.  The refined food as become the unrefined food.  This has been hard for us.  I love to cook pasta and potatoes and pizza and we both love to eat carbs.  But we feel better when we don't.  So we have started our experiment in low carb cooking.  We bend the rules a little every now and then, but for the most part we live the unrefined life.
